banana nut bread with cinnamon butter

I’m not one to just pick up a banana and go to town, never really cared for the actual thing. I do, however, love banana bread, banana pudding,banana popsicles, and Blue Bell’s diving banana pudding ice cream. My husband Michael loves bananas but can never quite seem to finish the whole bunch by himself so I get to make banana bread quite often. I love trying different variations to the classic. This is a very basic banana nut bread recipe but with a special twist. Yummy cinnamon butter folded into the batter giving a nice sweet surprise in every bite.

Ingredients

2 c. flour                                                            2 eggs

1 1/2 tsp. baking powder                              1 1/2 c. mashed banana (2 to 3 medium)

1/2 tsp. cinnamon                                          1/2 c. butter, softened

1/2 tsp. salt                                                       1 1/2 tsp. vanilla

1/2 tsp. baking soda                                       3/4 c. sugar

1/4 c. buttermilk                                              1 c. chopped nuts

For the Cinnamon Butter

4 tbls. butter, chilled and cut into small pieces

1/2  tbls. cinnamon

Preparation

Preheat oven to 350 F. Grease and flour a 9 x 5 loaf pan and set aside.

Cream sugar and butter together; add eggs, one at a time. Mix well. Add vanilla. Sift flour, baking powder, salt, cinnamon and baking soda into mixing bowl. Add flour and buttermilk alternately to butter and sugar mixture, beginning and ending with flour. Add bananas and nuts. In a small bowl, work butter and cinnamon into small pieces to make the cinnamon butter. Fold cinnamon butter into the batter. Pour into prepared loaf pan. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan on wire rack for 10 minutes. Turn bread out onto the rack and allow to cool.
