granola bars

A while back I bought some Special K low fat granola. I really like most Special K cereals but this one wasn’t my favorite, so I decided to make granola bars out of it! This recipe is flexible, you could use any kind of granola cereal. I used a good health energy mix from wal-mart but again you can use any combination of dried fruits/nuts. I liked what the mix had (soy nuts, dried cranberries, almonds, pepitas) so I used that!

Ingredients

1/2 cup honey

3/4 cup brown sugar

1 tsp. vanilla

1/2 tsp. cinnamon

2 1/2 cups granola cereal

1 cup any combination of fruits, nuts, etc…

Preparation

Bring to a boil the honey and brown sugar. Add peanut butter, vanilla, and cinnamon and beat until smooth. Add remaining ingredients and stir until smooth. Press into a parchment lined 9×13 pan and let cool. Cut into bars or squares and enjoy!
