baked eggs in spicy tomato sauce for two

Runny eggs, buttery crunchy toast, spicy tomato sauce, and fresh basil. Is there anyway that combination could NOT be good? Let me tell you it was delicious. We had this for breakfast but I think it’d be perfect for dinner too. Who doesn’t love breakfast for dinner? It was super filling and the toast dipped into the eggs and tomato sauce with just a little hint of basil was divine. Try it tomorrow morning, it’s a great way to start your day!

Ingredients:

1 cup tomato-basil pasta sauce

2 cloves garlic, minced

1/4 tsp. red pepper flakes

1/4 tsp. dried oregano

1/4 cup packed fresh basil leaves, torn in pieces, plus more for garnish

Salt and pepper to taste

2 slices mozzarella

4 eggs, room temperature

4 slices toasted bread

Preparation:

Preheat oven to 425 F.

Saute garlic over medium-high heat in saucepan until softened. Add pasta sauce, red pepper flakes, oregano, and basil and simmer for 10 minutes.

Place sauce in bottom of 2 ramekins, place 1 slice of mozzarella on top of sauce. Crack two eggs on to mozzarella slices and season with salt and pepper. Bake for 15-17 minutes until whites have set but yolk is still soft.

Garnish with fresh basil and serve with toasted bread.
