This sweet dessert pizza is too good!! The brownie,nice and chewy, is topped with a sweet creamy layer of cream cheese then topped with berries. With that combination I don’t know how this could be anything BUT delicious! I don’t have a regular pizza pan (I just use my pizza stone) so I put these in a jelly roll pan. Either one would work!
For the brownie:
3/4 c. all purpose flour
1/2 c. unsweetened cocoa powder
1/4 tsp. kosher salt
1/2 c. unsalted butter, melted
3/4 c. sugar
3/4 c. packed light brown sugar
1 Tbls. vanilla extract
2 large eggs, at room temperature
For the cream cheese layer:
1 8oz. pkg. cream cheese, softened
1/3 c. sugar
1/2 tsp. vanilla
2 cups strawberries (you could use any combination berries)
1/4 c. strawberry jelly
Preheat oven to 350F.
Sift the flour, unsweetened cocoa powder and kosher salt. Set aside.
In a bowl of a stand mixer with the paddle attachment, mix together the melted butter, sugar, packed light brown sugar and vanilla extract. Once combined, add in the eggs and mix. Slowly add in the dry ingredients and mix until almost combined. Bake for 15-20 minutes. Allow brownies to cool before adding cream cheese layer.
In a small bowl, beat cream cheese, sugar and vanilla until smooth. Spread cream cheese over brownies, don’t spread all the way to edges you want to have a “crust” edge for this handheld snack. Arrange berries over cream cheese mixture. Heat jelly until smooth and brush over berries. Cut into wedges or squares and enjoy!!
