two easy sides

I get in the habit of just pairing green beans or brown rice with any meal, they’re easy go-to’s. If you are wanting to change it up a bit here are two easy sides that could go with any main dish!

The first is one I saw all over pinterest and knew I had to try it. It is a swedish potato dish called hasselback potato. They were delicious! The potato was crispy on the inside and so tender and flavorful on the inside!

The second is broccoli with cheddar sauce. We really enjoyed this one, the cheese sauce wasn’t too heavy and the broccoli stayed nice and crisp.

Hasselback Potato


2 medium size potatoes (or 1/2 to one whole per person)

2 – 3 cloves of garlic, thinly sliced

2 tbls. olive oil

3 tbls. butter, cut into chunks (optional- put butter on the husbands not on mine)

Sea Salt or Kosher Salt

Freshly Ground Black Pepper


Preheat oven to 425F. Wash and dry potatoes. On cutting board, from one end to other cut thin slits until almost all the way through potato.

Arrange potatoes on baking sheet sprayed with cooking spray. Insert garlic between slits and if using put butter on top. Drizzle with olive oil and sprinkle with salt and pepper.

Bake potatoes for about 40 minutes.

Broccoli with  Cheddar Sauce

recipe adapted from


1 tbls. all-purpose flour

1 c. fat-free milk

1/2 c. shredded reduced-fat sharp cheddar cheese

3 tbls. grated fresh Parmesan cheese

1/2 tsp. Dijon mustard

1/4 tsp. salt

1/4 tsp. freshly ground black pepper

1 pound broccoli florets (about 8 1/2 cups)


Place flour in a medium saucepan. Gradually add milk, stirring constantly with a whisk until smooth. Cook over medium-high heat 2 minutes or until mixture is bubbly and thickened, stir constantly. Cook 1 additional minute. Remove from heat. Add cheeses, mustard, salt, pepper, and thyme, stirring with a whisk until smooth. Keep warm.

Add water to a large saucepan to a depth of 1 inch; set a large vegetable steamer in pan. Bring water to a boil over medium-high heat. Add broccoli to steamer. Steam broccoli, covered, 4 minutes or until crisp-tender. Serve broccoli immediately with sauce.
