pumpkin spice granola

Yummy, yummy warm and nutty, pumpkin spice-y granola! Perfect by the handful, delicious with vanilla yogurt, delicious as a hot cereal in the morning. Love making granola, it’s easy to use whatever you have on hand and adapt it to your own preference. The aroma while this was baking was amazing.

Puppy Rhyder loved it so much he waited by the oven door while it baked just hoping for a little taste.

Ingredients:

3 c. old fashion rolled oats

1/2 c. canned pumpkin (not pumpkin pie filling)

1/4 c. maple syrup

1/4 c. brown sugar

3/4 c. dried cranberries

1/2 c. chopped walnuts

1/2 c. chopped almonds

1 T olive oil

1 1/2 tsp. cinnamon

1/2 tsp. pumpkin pie spice

1/4 tsp. nutmeg

1/2 tsp salt

Preparation:

Preheat oven to 300 degrees. Spray a large baking sheet with nonstick cooking spray. Combine all ingredients in a large bowl and mix well until the wet ingredients are evenly incorporated. Spread out mix into an even layer onto a baking sheet. Bake about 30 minutes, stir and spread mixture in an even layer again. Continue baking about 30 minutes more. Let cool completely and store in an airtight container.

  1. This sounds amazing, thanks for sharing! Do you ever find that some of your cranberries burn when you’re baking it? That always happens when I bake regular granola, I’m wondering if I should add them in afterwards or if the pumpkin keeps them moist enough to not burn…

    • It is amazing, you’re welcome! Had a big bowl for breakfast this morning..so good!! My cranberries didn’t burn but I did find that they got a little too chewy for me afterwards so I think next time I would add them afterwards… Happy Fall to you!!
