This is a wonderfully simple, one-pot meal. The flavors of apple cider, lemon juice, garlic and onions work so well together. It takes just a few minutes prep time, a marinade all day then a good long bake in the oven. The chicken legs get nice and crispy on the outside and juicy on the inside. The potatoes and the onions soak up all of the yummy apple cider juices and everything tastes just wonderful. It is an excellent dinner choice for a cold winters day. It’ll warm you right up!

1/4 c. olive oil
1/4 c. chopped fresh thyme
2 tbls. apple cider vinegar
2 tsp. Dijon mustard

Preheat oven to 350 degrees. Arrange the chicken pieces in a large roasting pan skin-side up. Pour all of the marinade, including onions and lemons over and around the pieces.
