Caramel Apple Bread Pudding

Yesterday was a cold, dreary winter day. This bread pudding was the perfect way to end the day. A lovely cold weather dessert. Warm gooey apples, cinnamon spice, hints of nutmeg. Delicious! Even if the weather in your area is perfect this is still a yummy treat!



recipe adapted from

6 tablespoons butter

1/3 c. light brown sugar

2 tsp. cinnamon

1/4 tsp. nutmeg

3 apples (I used 2 jonagolds and 1 granny smith)

6 cups bread cubes

Peel and slice the apples. I sliced, actually my extremely strong husband cored and sliced (see picture below). We decided we wanted a little variety so we did some thin slices and some large diced pieces.DSC_0019

In a large skillet, melt the butter then add the brown sugar, cinnamon and nutmeg. Add the apples and cook until slightly softened and brown sugar butter mixture (caramel) has thickened.

Preheat oven to 350. Spray a 9×13 pan and place half of bread cubes in bottom. Put half of apple mixture on top of bread cubes then layer with the rest of the bread and lastly the apple mixture.

Whisk together:

1 1/4 c. milk

1 c. whipping cream

4 eggs

2/3 c. sugar

1 tablespoon vanilla extract

1/4 tsp. salt


Pour this mixture on top of bread and apples in pan. Bake in preheated oven 40-45 minutes or until set in the middle. Serve with caramel sauce, vanilla sauce or vanilla ice cream!
