Superfoods Granola


This granola is full of yummy superfoods! Heart healthy oats and walnuts, antioxidant rich blueberries, chia seeds rich in omega-3 fatty acids (among many other benefits), rich in fiber flax seeds, and I’d have to dedicate a whole page to list the benefits of honey and coconut oil!


I love granola with yogurt, milk, or by the handful! You can’t go wrong with this one!


4 cups oats

1 c. chopped walnuts

1/3 c. unsweetened coconut

½ c. dried fruit (blueberries)

¼ c. chia seeds

¼ c. flax seeds

1 tbls. cinnamon

1 tbls. brown sugar

2/3 c. honey

1/3 c. coconut oil, melted


Combine oats and all ingredients until honey. Melt honey and coconut oil together to a pourable consistency. Combine with oat mixture and stir until evenly coated.

Spread on a rimmed baking sheet and bake at 300° for 20-30 minutes, depending on your desired crunchiness of granola! Let cool. Store in an airtight container.
