Frosted Sugar Cookie Bars

Here’s another classic, simple and delicious sugar cookie, but in bar form! They are thick but still really soft, with a really great sugary vanilla flavor. The frosting is just a simple buttercream that can be colored (or not!) any color you’d like. These would be perfect for any holiday! Valentine’s Day? Pink frosting with cute sprinkles! Easter? A light pink, light yellow, or pretty green! Christmas? Red frosting with some green sprinkles! The possibilities are endless!

You must make these! It will take you just a few minutes to whip them up so there’s really no reason not to!

The key is not to overbake. I pulled mine out as they were just starting to get a light, light brown. I let them cool in the pan for a minute or two then slid them off with the parchment paper so they wouldn’t continue to cook in the hot pan.

Ingredients:

1 cup unsalted butter, at room temp.

2 cups sugar

4 large eggs, at room temp.

2 teaspoons vanilla

5 cups flour

1 teaspoon salt

1/2 teaspoon baking soda

Directions:

Preheat the oven to 375 degrees.

Line a rimmed 10 x 15-inch with parchment paper and lightly spray with cooking oil.

In the bowl of your standing mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed until light and fluffy, about 2 minutes. Reduce the mixer speed to medium and add the eggs, one at a time, mixing well and scraping down the sides of the bowl after each addition. Add the vanilla.

In a separate bowl, whisk together the flour, salt, and baking soda, mixing well. Reduce the mixer speed to low, and slowly add the flour mixture to the butter mixture.  Mix until thoroughly combined.

Using a rubber spatula (or your lightly floured hands), evenly spread the cookie dough onto the prepared baking sheet.

Bake for about 15 minutes, or until a tester inserted into the center comes out clean.  (They should be light golden brown). Let cool completely.

While the cookie bars are cooling, make the frosting.

Ingredients:

1 cup unsalted butter, at room temperature

1 teaspoon vanilla

Pinch of salt

4 cups confectioners’ sugar

5 tablespoons milk

Food coloring, as desired

Sprinkles, for garnish, optional

Directions:

In the bowl of your standing mixer fitted with the paddle attachment, beat the butter until light and fluffy, about 2 minutes. Add the vanilla and salt, mixing well.

Reduce the mixer speed to low and carefully add the confectioners’ sugar, one cup at a time. Add the milk and mix until smooth.

Add your desired amount of food color (if using) and mix until incorporated. Frost and decorate as desired onto the cookie bars.
