This is such a GREAT quick and easy, delicious meal! The ingredients are so simple, the prep is almost non existent and the results are wonderful! We made tacos with a little corn for some extra veggies and cilantro lime rice but you could make burritos, enchiladas, some loaded nachos, burrito bowls, or a great salad!

12 oz. boneless skinless chicken breasts
15 oz. can black beans, rinsed and drained
10 oz. can RoTel (diced tomatoes and green chilies)
1 1/2 tsp. chili powder
1 tsp. cumin
1/2 tsp. garlic powder
Salt and pepper
Pour beans and RoTel in crockpot and season with chili powder and cumin. Place chicken breast on top and season with garlic powder and salt and pepper. Cover and cook on HIGH 2 hours on or LOW 6-8 hours. Shred chicken and serve!
