Baked Corn Dogs

We love these corn dogs! Who doesn’t love corn dogs?! These are a great alternative to the fried version. Of course, there not EXACTLY the same but I think they are a fierce competitor to their fried counterpart. DSC_0113

These take almost no time to whip up so they’re a great dinner for a busy night! You can use any kind of cheese and any kind of hot dog. The recipe only makes about 4-5 corn dogs so if you’re feeding a bigger crowd you’d want to double! We’ve done them with turkey and beef and they’ve been great! I haven’t tried but I think they’d even be easy to do a mini version!

Ingredients:

1/2 c. all-purpose flour

1/2 c. cornmeal

1 1/2 tsp. baking powder

1/4 tsp. salt

4 tablespoons butter, melted

1/4 c. buttermilk + 2 tbls.

1/2 c. shredded cheddar cheese

4-5 hot dogs

Directions:  

Preheat your oven to 350 degrees. Using wooden skewers, carefully push the stick halfway into the hot dog. Set aside.

In the bowl of an electric mixer, slowly mix the flour, cornmeal, baking powder and salt. Add the butter, and slowly add the buttermilk. Add the cheese, and mix until you get a firm dough that pulls away from the bowl.

From here, you can either take the dough and divide into equal pieces and then roll out to wrap around the hot dog or you can grab a bit of the dough and form around the hot dog to cover. This is what I do and it works just fine.

Place on baking sheet covered with foil and sprayed with non-stick cooking spray. Bake for 15-18 minutes. Careful not to overcook!
