This, right here, is delicious slimmed down comfort food. A seriously rich and yummy alfredo sauce without the rich ingredients! You’d never guess the base of the sauce is greek yogurt. I love that! Combine that sauce with whole wheat pasta, lean chicken, and broccoli and you’ve got a great and healthy dinner for you and the family! Not to mention quick too! With my hubby’s fast help we had this ready in 15 minutes. But even, if I’d made it by myself I can’t see it taking longer than 30 minutes!

2-3 chicken breasts, seasoned with garlic salt and pepper, cut into bite-size pieces, and cooked (I did 3 breasts because they were very small)
2 c. frozen broccoli florets
8 oz. whole wheat rotini
2 tbls. olive oil
3 garlic cloves, minced
2 tbls. flour
1 c. chicken broth
1/4 c. milk
1/4 c. non-fat plain greek yogurt
salt and pepper
3/4 c. fresh parmesan cheese, grated
Cook pasta according to package directions, add broccoli in last 5 minutes of cooking time. Drain and set aside.
In a medium skillet over medium-high heat add olive oil and saute garlic until golden brown, about 1-2 minutes. Sprinkle in flour, whisk to stir and cook for another minute. Slowly whisk in chicken broth and then milk. Whisk in greek yogurt and salt and pepper to taste. Turn heat down to low and let simmer until thickened. This will take about 3-4 minutes. Turn heat off then add parmesan cheese, cooked chicken and pasta and broccoli. Stir to combine. If too thick, add a splash of chicken broth.
