With the warm weather coming so quickly this year, I keep thinking summer is just around the corner. It is not, but not only will the weather in E.Tex make you think it is summer this granola will have you wishing for summer days as well! Lovely bites of coconut, sweet pineapple are the perfect snack to help with the winter blues! Even if it feels nothing like winter!

3 c. quick oats
1 c. unsweetened shredded coconut
1/3 c. coconut oil, melted into liquid form
1/4 c. real maple syrup
1 tsp. almond extract
1 c. chopped dried pineapple
Preheat oven to 325°F. Combine oats and coconut in a large bowl.
Add coconut oil, maple syrup and almond extract and stir to combine.
Spread the mixture into an even, single layer on a large, rimmed baking sheet. Bake for about 20 minutes, until the granola is crisp and light golden brown. Stir in pineapple and set sheet on a wire rack to cool completely.
Serve over yogurt or with a nice splash of milk!
