I really loved the flavor of the last granola I made. Really light with a yummy tropical taste! I knew, however, the next time I made some granola I wanted a more crunchy granola with big granola clusters! This granola definitely delivered! Really delicious flavor and lots of yummy crunchy goodness!! I used dried cherries and blueberries but feel free to use whatever dried fruit you have!!

3 c. quick oats
1/4 c. coconut oil, melted
1/2 c. honey
1 1/2 tsp. vanilla
1/2 tsp. nutmeg
1/4 c. coconut flakes
1/3 c. chopped walnuts
1/4 c. dried blueberries, roughly chopped
1/4 c. dried cherries, roughly chopped
1/4 c. ground flax seed
Preheat oven to 325 degrees. Line a cookie/baking sheet with parchment paper.
In a large bowl, mix together the rest of the ingredients(oats,spices,dried fruit,flax seed) Pour wet ingredients over dry mixture and stir until evenly coated
Pour the mixture onto your baking sheet and spread the granola, pressing lightly down on the granola.
Bake the granola for 25-30 minutes. (or until you see top of the granola browning) If you’re not into clusters you can stir the granola a few times during the baking. If you want glorious, crunchy clusters, don’t stir!
When done, remove the granola from the oven and let it cool completely before breaking it into clusters. Once the granola has cooled, you can break the granola into any size clusters you wish.
