Baked Strawberry Doughnuts

I LOVE these doughnuts!! So fresh and light, the perfect treat for breakfast or dessert ;)!

And, they’re baked, so you don’t have to feel too guilty indulging! The doughnut batter comes together very quickly, as well as the glaze. I love my doughnut pan and use it often!

These doughnuts are full of yummy strawberry flavor! With chunks of strawberries IN the doughnuts then a glaze simply made with pureed strawberries and powdered sugar, the perfect thing to have on this first day of spring!

Try them out, you will not regret it! And if you don’t have a doughnut pan you should get one ASAP.

Ingredients:

1 c. whole wheat pastry flour

1 c. all purpose flour

1/3 c. sugar

1 1/2 tsp. baking powder

3/4 c. low-fat buttermilk

2 eggs

1/4 c. honey

2 tbls. unsalted butter, melted

1 tsp. vanilla extract

1/2 c. strawberries slightly mashed

Directions:

Preheat the oven to 400°F. Spray the pan with cooking spray.

In a bowl, combine the flours,  sugar, and baking powder. In another bowl, combine the remaining ingredients.

Pour the wet ingredients over the dry ingredients and stir until just combined. Spoon the batter into the pan, filling about 2/3 full.

Bake for 10-12 minutes, until golden brown on the bottom.

Allow the donuts to cool in the pan for about 3 minutes before emptying out onto a cooling rack. Once cooled completely (if you can wait that long!), dip in strawberry glaze (see recipe below).

For the glaze:

3-4 medium strawberries, pureed.

1 1/2 c. powdered sugar

Combine ingredients.
