Whole Wheat Texas Sheet Cake

I’m sure you’ve heard or had the delicious Texas Sheet Cake, it’s an easy and delicious cake! This is not necessarily a healthy version of that cake but I would say it’s definitely healthier. Whole wheat flour, greek yogurt, applesauce; all of these things help lighten it up a bit without sacrificing any flavor. It is still super moist, chocolate-y and delicious!! The frosting is just about the same as any other Texas sheet cake you’ll see, so once again not “healthy” but something you don’t have to feel totally guilty about indulging in every once in awhile. This was a hit at my house and I’m sure it will be at yours as well!!

For the cake:

1 c. water                                                                2 c. whole wheat pastry flour

1/2 c. unsalted butter                                          3/4 c. sugar

1/3 c. unsweetened cocoa powder                  1 tsp. baking soda

2 eggs                                                                      1/2 tsp. salt

3/4 c. no fat plain greek yogurt

1/2 c. unsweetened applesauce


Preheat oven to 350 degrees.
Add the butter, water, and cocoa to a 2 c. glass liquid measuring cup and microwave until it boils, approx. 2-1/2 minutes. Whisk until smooth and set aside to cool.
In another medium bowl, whisk the eggs; then add the yogurt and applesauce and whisk until combined. Set aside.
In a separate large bowl, whisk together the flour, sugar, baking soda, and salt. Add the warm chocolate mixture; stir to combine completely.  Add the yogurt mixture; stir again until completely combined.  Pour batter into one ungreased 13×18 baking sheet (jelly roll pan).
Bake for 15-20 minutes until toothpick inserted in center comes out clean.

While cake is baking, make the icing:

1/2 c. butter

1/3 c. unsweetened cocoa powder

6-8 tbls. milk

1 tsp. vanilla

3-4 c. powdered sugar

1 c. chopped pecans

Melt butter in medium bowl in microwave (30-40 seconds).  Whisk cocoa into melted butter until smooth. Whisk in milk and vanilla until well combined, and then whisk in powdered sugar until smooth. Stir in chopped nuts, if desired.  Frost right away while cake is still hot. Pour on frosting and gently spread to edges with a spatula. Let frosted cake cool completely, cover, and store in refrigerator.
