Hello! And HAPPY SUMMER!!
It’s been awhile hasn’t it?! I always forget how busy the end of the year is at school. End of year grades, award ceremonies, field day, end of year parties, slideshows, cleaning out desks and all that jazz!
Now that it’s glorious summertime I hope to get things going around here! I have a perfectly perfect summer dinner to share with you!! Tomatoes and fresh basil are so delicious in the summer! This recipe showcases them perfectly. I absolutely love caprese, add yummy grilled chicken and a nice whole wheat pasta and it’s even more delicious!

13 0z. whole wheat penne pasta
4 cloves garlic, minced
2 tbls. olive oil, divided
2 tbls. white wine vinegar (original recipe used balsamic, but I was out! you can use either!)
6-8 fresh basil leaves, chopped
2-3 grilled chicken breasts
8 0z. part skim mozzarella, cubed
10 oz. cherry tomatoes, halved and quartered
Cook pasta according to package instructions.
In a large skillet over medium heat, cook garlic in 1 tbsp olive oil until fragrant. Add cooked and drained pasta, and toss with remaining oil, vinegar and basil. Season with salt and pepper.
Add chicken and cheese and gently toss just until cheese softens. Remove from heat and stir in tomatoes. Serve immediately.
