shrimp and tomato pasta

This pasta dish was extremely easy, extremely quick, and extremely delicious! Do I need to say anything else? It is an excellent fresh and healthy dish to whip up on any night! The flavors are so fresh!

We actually had this for our Valentine’s Day dinner and it was perfectly delicious! It can definitely be fancied up for a nice dinner but is also simple enough for just any ole’ night!

Ingredients:

1 lb. large shrimp, peeled and deveined

1 tbls. olive oil

3-4 cloves garlic, minced

1/4 c. white wine or chicken broth

14 oz. can Italian diced tomatoes, drained

1/3 c. fat-free half and half

Salt and pepper

1 tsp. lemon juice

8 oz. whole-wheat angel hair pasta

Fresh oregano, parsley and basil, roughly chopped, to taste

Directions: 


Boil water for pasta. Cook according to package instructions.

Meanwhile, season shrimp with salt. Cook shrimp and garlic in olive oil in a large skillet over medium heat for about 2 minutes. Add tomatoes, wine, salt and pepper and cook an additional minute. Add half and half and cook 1 more minute, add basil, oregano and lemon juice. Add parsley and serve over pasta.

Serve with crusty French bread and some more wine. 🙂

cilantro lime shrimp

Man, oh, man was this shrimp good! I LOVE the combination of cilantro and lime in almost anything! Shrimp is such a great and fast weeknight dinner option. You can literally whip this up in less than 10 minutes. Not only is shrimp super fast but it’s also great for you! Low in calories, tons of protein! Try it with some brown rice or some crispy garlic toast to soak up all the yummy juices!

Ingredients:

2 tsp. olive oil

2 lb. shrimp, shelled and deveined

6 cloves garlic, crushed and roughly chopped

1/2 c. chopped fresh cilantro

1 lime

salt and pepper

1 tsp. chili powder

Preparation:

Heat a large frying pan on medium-high heat. Add oil to the pan, when oil is hot add shrimp. Season with salt, pepper and chili powder. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Sauté another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot.

tilapia parmesan

This was a wonderfully simple and delicious meal. Just like chicken parmesan the tilapia is lightly breaded then served with an easy tomato cream sauce. We had it over noodles and it was delicious!

Ingredients:

1 1/3 c. favorite spaghetti sauce

2 garlic cloves, minced

3 tbls. half & half

2 4-5 ounce Tilapia fillets

1/2 c. flour

1/2 tsp. Kosher salt

1/2 tsp. freshly cracked black pepper

1 egg, beaten

1 1/2 cups Panko crumbs or Italian breadcrumbs

Preparation:

In a medium sauce pan, over medium-low heat, bring the sauce and garlic to a simmer.  Stirring occasionally, allow to cook until reduced by half.  The sauce will become dark red and thick.  Stir in the cream and heat through.  Keep warm.

Rinse and dry the tilapia fillets and set aside.

In three pie plates or shallow dishes, place the flour, salt and pepper in one, the beaten egg in another, and the crumbs in the third.  Coat each fillet with the flour mixture, dip in egg until covered, and then press on the crumbs.

Heat  a frying pan on medium to medium-high heat until very hot.  Add a little olive oil and fry the fish for 3-4 minutes on each side until crispy-golden and fish flakes easily with a fork.  Remove to a platter and spoon the sauce over.  Garnish with Parmesan.
